Criollo Stout is the latest in Carlsberg's Semper Ardens range of exclusive hand-brewed beers. The name comes from the Criollo cocoa beans used in the chocolate that is added during the brewing process.
The chocolate - the world renowned Valrhona brand - was chosen to complement the five different malt types used to provide a wonderfully rich and balanced taste. Criollo is the third beer from the Semper Ardens development project, which for more than a year has brought together Carlsberg's master brewers with some of Denmark's leading chefs.
Among the malt types used, chocolate malt and caramel malt deliver the lightly burnt, sweet malt aroma together with the black colour. Rye malt contributes and characteristic acidity and taste nuances. Pilsner malt is also used.
Criollo Stout is unfiltered. The remaining yeast adds body and a certain dryness in the finish. A small amount of English liquorice is also added and the stout is hopped with a carefully chosen bitter hop together with a Saaz aroma hop.
Semper Ardens, or Always Burning, was one of the mottoes of Carl Jacobsen, the son of Carlsberg's founder J.C. Jacobsen. The motto reflects his philosophy that a brewer should always strive to improve both himself and the quality of his beer.
Brewing takes place at Carlsberg's small-scale pilot brewery in Valby, Copenhagen. Only 3,000 bottles of each brew will be produced, which is the maximum capacity of the pilot brewery. These beers will only be available in 30 specially selected restaurants in Denmark.
Rare yeast types, unusual cereals, and completely new brewing strategies form the basis of the new brews. Many different types of hops with very different aroma characteristics will be used.
