Devising and producing this innovative new beer involved a close collaboration between several partners: New Carnegie Brewery (Nya Carnegiebryggeriet), IVL Swedish Environmental Institute and Carlsberg Sverige. The wastewater used in PU:REST was purified through a chain of purification stages at the nearby Hammarby Sjöstadsverk. The brewing process uses organic pilsner malt, Spalter hops and Brooklyn House lager yeast.
Chris Thurgeson, brewmaster at Nya Carnegiebruggeriet, said,
“Using such a unique kind of water, we wanted to focus on the beer having a very clean, crisp taste.”
The limited-edition beer sold out in major retailers within a week..
